for 2 servings<\/strong><\/em><\/span><\/p>\n

for 2 servings
\n350 g chicken breast
\n200 ml of water
\n10 scoops of Live Better coconut milk powder<\/a><\/strong><\/span> (about 50 g)
\n2\/3 teaspoon curry powder
\nOnion, to taste
\nsalt
\n1 tbsp coconut oil
\n80 g basmati rice<\/p>\n<\/div><\/div><\/div>

Cut the chicken breast into cubes.<\/p>\n

Heat the coconut oil in a pan and, once melted, add the finely chopped onion. After about 2 minutes, add the curry and let it dissolve. After another minute, add the chicken, season with salt, and saut\u00e9 over medium heat for about 8 minutes, stirring occasionally with a wooden spoon.<\/p>\n

Meanwhile, prepare the coconut milk by mixing 200 ml boiling water with 10 scoops of Live Better coconut milk powder. Pour it over the chicken, cover with a lid, and cook on low heat.<\/p>\n

After about 20 minutes, remove the lid and continue cooking for another 15 minutes, or until the coconut milk is almost completely absorbed.<\/p>\n

Serve your curry chicken with basmati rice cooked beforehand.<\/p>\n

Here\u2019s how I cook basmati rice:
\n1 part rice
\n2 parts water<\/p>\n

Place everything in a non-stick saucepan if possible.<\/p>\n

Add a drizzle of oil, a pinch of salt, and a bay leaf, then stir.<\/p>\n

Cover with a lid and cook until the rice has absorbed all the water (about 10\u201315 minutes).<\/p>\n
